Who's hungry for a great dish and story? We always are!
This October we've got a great spooky but not scary read and recipe ready for you. We're making Ghoulish Cajun Goulash from Ellen Byron's cozy mystery Murder in the Bayou Boneyard.
Let's get started...
Ghoulish Cajun Goulash
(serves 8)
Ingredients-
2 cups elbow macaroni
1 tbsp olive oil
1 ½ pounds ground beef or ground turkey
1 small white onion, chopped
1 small green bell pepper, seeded, chopped
¼ cup chopped celery
3 garlic cloves, diced
¼ cup beef, chicken, or turkey broth
1 (14.5 oz) can tomato sauce
1 (14.5 oz) can diced tomatoes
1 tbsp Cajun seasoning
1 tsp Italian seasing
½ tsp paprika
Salt and pepper to taste
1 cup cheddar cheese, shredded
1 cup mozzarella cheese, shredded
¼ cup parsley, chopped
Tabasco sauce to taste
Instructions-
1. Cook elbow macaroni, drain, set aside.
2. In a large cast-iron or Dutch oven, over med. heat, cook olive oil, beef/turkey, onion, pepper, celery, and garlic for 5-6 mins. Or until meat and veggies are softened and browned.
3. Add broth, tomato sauce, diced tomatoes, Cajun seasoning, Italian seasoning, paprika, salt, and pepper.
4. Bring the mixture to a boil, then mix in cooked pasta. Cover and reduce to summer for 8-10 mins.
5. Just before serving, add the cheeses to the pot, stirring for 2-3 minutes until cheese is melted. Garnish each serving with parsley.
6. Serve immediately with Tabasco on the side for a little heat.
