This May we're sharing the recipe for KFC Style Crispy Fried Chicken from Cleo Coyle's Brewed Awakening. The beloved cozy series The Coffeehouse Mysteries is packed with recipes, suspense, and laughs!

Ingredients


(Makes 4 Servings)


3 to 5 pounds of chicken (10 or so pieces)

1 1/3 cups buttermilk

1 large egg

1 ½ dried tsp dried basil

1 ½ tsp dried oregano

1 ½ tsp dried thyme

1 tsp black pepper

1 tsp celery salt

1 tsp garlic salt

1 ½ tsp ground ginger

1 ½ tsp mustard powder

1 ½ tsp sweet paprika

2 tsp white pepper

½ tsp salt

½ tsp accent seasoning (optional)

2 cups all-purpose flour

3-5 cups vegetable oil


Instructions

1 Prep chicken – Rinse chicken pieces and pat dry thoroughly. Cut into smaller pieces if using breasts or whole chicken first.

2 Marinate – Whisk together buttermilk and egg in a large bowl then add chicken pieces to them mix and marinate at room temp for 45 minutes.

3 Prep coating – Combine herbs, spices, and salt in a bowl along with any accent if you’re using one. Because basil, oregano, and thyme leaves are larger, you will need to pulverize together in a food processor or grinder. Or put everything in a baggie and pound with meat hammer or rolling pin. Measure out flour and whisk into your spice mix.

4 Coat the chicken – When marinating is finished, remove chicken pieces one at a time and shake off excess liquid. Dredge each piece in the flour and spice mix until coated. Place pieces on a sheet pan and rest at room temp for 30 minutes.

5 Heat the oil – Get a deep skillet ready with oil 3 to 4 inches deep. Oil should preheat to 350F.

6 Fry the chicken – Fry in small groups of 3-5 pieces for 15-20 minutes each. Should turn pieces roughly every 3 minutes. Keep oil hot between batches. Keep chicken crispy by placing finished pieces on a rack with a sheet pan beneath verses paper towels or parchment paper.
