Our recipes and reads posts are returning for 2026! We can't wait to share more delicious dishes and stories. Let's get started... This January we're making Hayley's spaghetti carbonara from Lee Hollis' mystery novel Death of an Italian Chef.


Ingredients -

1 pound of thin spaghetti

8 oz pancetta or bacon, chopped

2 cloves garlic, minced

3 eggs

1 cup fresh grated parmesan cheese

Fresh ground black pepper

Pinch of red pepper flakes (optional)


Instructions-

  1. Whisk the eggs, parmesan cheese, and black pepper in a bowl and set aside.

  2. In a large pan, cook your pancetta/bacon over medium heat until crisp, then remove from pan and add garlic and red pepper flakes if using. Cook for one additional minute, add back pancetta.

  3. Meanwhile, have the pasta cooking salted water until al dente. Reserve 1 cup pasta water, drain and add to the pancetta and garlic. Use tongs to combine.

  4. Remove pasta from heat and add the egg mixture.

  5. Add water to pasta if needed.

  6. Plate and enjoy!
