It's the time of year meant for gobbling up great food and books! We're making Family Apple Crisp this November from The Recipe Box by Viola Shipman.
Family Apple Crisp
(serves 16)
Ingredients
Filling-
5 med-large Granny Smith Apples
3 med Honeycrisp Apples
4 med McIntosh Apples
1 stick unsalted butter
¼ cup light brown sugar, packed
1 tsp ground cinnamon
1 tsp baking spice
1 tsp apple pie spice
Topping-
2 cups granulated sugar
1 ½ cups all-purpose flour
1 tsp ground cinnamon
2/3 cup butter, room temp.
Instructions
Filling-
1. Preheat the oven to 350F.
2. Peel the apples and cut them into wedges. Place the wedges into a large bowl.
3. In a large skillet or saucepan, melt 1 stick of butter over med. heat.
4. Add the apples. Slowly stir and turn over the apples in the butter.
5. Add the brown sugar, cinnamon, baking spice, and apple pie spice to the apples and butter and stir.
6. Continue to stir until the sugar and spices are incorporated and have coated the apples.
7. Reduce heat to low. Cover and cook 10-12 mins, stirring occasionally (apples should still be firm but slightly softened).
Topping-
1. While the apples are cooking, butter a 9x13 inch baking dish.
2. In a large mixing bowl, combine the sugar, flour, and cinnamon and blend together with a fork.
3. Cut the batter into large pats and add to the dry ingredients.
4. Use a pastry blender to cut the butter into a mixture until it resembles loose crumbles, about 2 mins. There will be some pea-sized pieces but the mixture should largely be an even, coarse crumble.
Assembly-
1. Transfer the apples and sauce to the baking dish.
2. By hand, sprinkle the topping mixture over the apples, distributing it evenly.
3. Firmly pat the topping onto the top of the apples.
4. Bake 50 minutes or until crust is golden.
5. Serve warm with whip cream or vanilla ice cream.
