Looking for a delicious summer salad and a splashy fun read? Look no further! Our may book and a recipe combo is perfect for you then! We're making Orange-Avacado Salad from Susan Mallery's fictional The Summer Book Club.


This one's easy so let's get started -


Ingredients-

Salad-

4 cups salad greens

1 ripe avocado, diced

1 bunch of green onion, sliced

3 oz crumbled feta cheese

1/4 cup pecan halves and pieces

Segents of 1 orange, cut into chunks


Dressing-

Juice and zest of 1 orange

2 tbsp balsamic vinegar

2 tbsp maple syrup

1 clove garlic, minced

1/4 tsp salt

1/8 tsp black pepper

1/2 cup olive oil


Instructions-

  1. Combine all dressing ingredients except olive oil in a blender. Blend well and slowly add oil. Makes about 1 cup.

  2. Toss salad ingredients together as desired.

  3. Add dressing and serve!


Note: Goes great with cooked chicken, ham, or shrimp also!
