Ready for another delicious dish and story? We've got a summer dessert perfect for your next party! And we're ready to share! This August we're making Strawberry Cake from Max Lucado's Miracle at the Higher Grounds Cafe.


Strawberry Cake


Ingredients

1 (16.5 oz) package of white cake mix

1 (1.4 oz) package of strawberry flavored gelatin

2/3 cup water

2/3 cup vegetable oil

4 large eggs

5 oz frozen strawberries for cake

4 tbsp butter or margarine, melted

4 cups confectioners’ sugar

5 oz frozen strawberries for frosting

4 tbsp milk

 

Instructions

1.      Preheat the oven to 325F.

2.      Grease and flour a 9 x 13 inch glass baking pan.

3.      In a large bowl, stir together the cake mix, gelatin mix, and make a well in the center to pour in the water, oil, and eggs.

4.      Add frozen strawberries. Beat on low speed until blended. Scrape bowl then increase to medium speed approx. 4 minutes.

5.       Pour batter into prepared pan. Bake in the preheated oven for 30 mins or until toothpick/tester comes out clean. Allow to cool.

6.      In a large bowl, combine the butter/margarine, confectioner’s sugar and frozen strawberries. Beat on high until creamy. Add milk a tbsp add a time until spreading consistency achieved.

7.      Spread strawberry frosting on cooled cake and serve!
